Gluten intolerance is an inability to break down gluten present in the diet, a glue-like protein found in wheat, rye, barley and oats. Gluten intolerance analysis requires a small sample of your saliva to identify the presence of variations in the HLA DQ genes that are shown to be associated with an increased risk for gluten intolerance.
